Before organics were trending and natural wine was a revelation, there once was a time when anything but was simply unimaginable.
There on the plains of Lucera in the1980’s, Paolo began his rescue of ancient tomato seedlings from the brink of extinction. The farm is historically known as La Motticella and Paolo Petrilli is the conductor of its completely natural and organic production. A production so limited and loved we have to reserve our tomatoes every year. Even Frank Sinatra reserved Paolo’s tomatoes that were privately flown in from Lucera to L.A. Tomatoes are picked when ripe, lightly boiled, peeled, jared and labelled all by hand with nothing but a single basil leaf as an additive. No salt, no preservatives, nothing.
